  • 41 can corn, drained
  • 51/2 can tomato sauce (about 8 oz)
  • 62 tbsp cornstarch
  • 71/2 packet French onion soup mix
  • 82 tsp Knorr beef powder
  • 91 tsp dried rosemary
  • 10Salt and pepper to taste

  • 124-5 medium russet potatoes, boiled (or instant mashed potatoes for quicker version)
  • 131/2 cup sour cream
  • 141 cup milk (add gradually)

Instructions

1

Boil potatoes until fork tender. Drain and mash with sour cream, milk, salt, and pepper. If using instant potatoes, prepare according to package directions and mix in the sour cream, milk, salt, and pepper.

2

Brown the ground turkey in a skillet over medium heat until fully cooked.

3

Add the French onion soup mix, Knorr beef powder, rosemary, tomato sauce, and cornstarch. Stir well.

4

Add in the carrots, peas, and corn and mix together.

5

If it seems too thick, add a small splash of water or broth.

6

Pour the meat and veggie mixture into a greased 8x8 or small casserole dish.

7

Spread the mashed potatoes evenly over the top.

8

Bake at 375°F for 25-30 minutes, or until heated through and the top starts to lightly brown.

9

Let sit for 5-10 minutes before serving.

💡 Chef's Tips

Use instant mashed potatoes to save time on prep.

You can prepare the filling ahead and refrigerate, then add the potato topping and bake when ready.

Leftovers reheat well in the oven at 350°F for about 15 minutes.

Feel free to substitute ground beef for the ground turkey.

Add a sprinkle of shredded cheddar cheese on top of the potatoes before baking for extra flavor.
