Heat olive oil in a large pot over medium-high heat.
Add chicken/shrimp and cook until done, about 5-7 minutes. Remove and set aside.
In the same pot, add onion and bell peppers. Cook for 3-4 minutes.
Add garlic and cook for 1 minute.
Add pasta, diced tomatoes, chicken broth, and Cajun seasoning.
Bring to a boil and cook pasta according to package directions, stirring occasionally.
Stir in heavy cream and return protein to pot.
Simmer for 2-3 minutes until heated through.
Season with salt and pepper.
Garnish with fresh parsley and serve.
