Shatta Mac and Cheese

Ingredients

  • 11 lb elbow macaroni
  • 23 tbsp butter
  • 33 tbsp flour
  • 42 cups whole milk
  • 52 cups shredded sharp cheddar cheese
  • 61 cup shredded Monterey Jack cheese
  • 71/2 tsp garlic powder
  • 81/2 tsp onion powder
  • 91/4 tsp cayenne pepper
  • 10Salt and pepper to taste
  • 11Fresh chives for garnish

Instructions

Cook macaroni according to package directions. Drain and set aside.

Melt butter in a large pot over medium heat.

Whisk in flour to create a roux and cook for 1 minute.

Gradually add milk, whisking constantly until smooth.

Add cheddar and Monterey Jack cheese, stirring until melted.

Season with garlic powder, onion powder, cayenne, salt, and pepper.

Stir in cooked pasta.

Heat through and serve immediately.
