Tex-Mex Black Bean Bowl

Ingredients

  • 12 cups cooked rice
  • 22 cans (15 oz each) black beans, drained and rinsed
  • 31 cup corn (fresh or frozen)
  • 41 red bell pepper, diced
  • 51/2 red onion, diced
  • 62 jalapeños, minced
  • 71/4 cup fresh cilantro, chopped
  • 82 limes, juiced
  • 92 tbsp olive oil
  • 101 tsp cumin
  • 11Salt and pepper to taste
  • 12Toppings: shredded cheese, sour cream, avocado, tortilla chips

Instructions

Warm rice and set aside.

In a large bowl, combine black beans, corn, bell pepper, red onion, and jalapeños.

In a small bowl, whisk together lime juice, olive oil, cumin, cilantro, salt, and pepper.

Pour dressing over bean mixture and toss gently.

Let sit for 5-10 minutes to allow flavors to meld.

Divide rice among bowls and top with bean mixture.

Add desired toppings.
